Healthy Halloween Recipes

Just because it is Halloween time, doesn't mean you have to eat unhealthy. You can still enjoy this festive time with delicious and healthy food with these recipes. 


Appetizers

Spicy Toasted Pumpkin Seeds

  • 1 cup pumpkin seeds
  • 1/2 oz olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp cayenne powder
Combine all ingredients. Spread out seeds on a baking sheet and bake until toasted.

Apple Chocolate

  • 2 apples, cut into wedges
  • 1/2 cup dark chocolate, warm melted
  • 1/4 cup chopped toasted nuts
  • Lime/lemon juice
Brush lime/lemon juice on apple slices, to prevent oxygenation.  
Drizzle chocolate on apple or dip apples into chocolate. Before the chocolate cools sprinkled nuts over apples.

Main Meals

 Flat-bread with Goat Cheese and Caramelized Onions Pizza



4 oz Goat cheese
1/4 cup green onion, chopped
1/2 cup caramelized onions
4 flat bread/ 1 medium size pita bread
1 tbsp. olive oil
1 tbsp. mixed herbal
1 tsp sea salt
1 tsp brown sugar

Squash Spaghetti Delight

  • 1 bake squash spaghetti, scrapped 
  • 1 cup jumbo shrimp, cleaned up
  • 1 small onion, chopped
  •  2 tbsp minced garlic
  • 3 tbsp parsley and basil
  • 2 tsp sea salt
  • 1/4 cup grated Parmesan cheese, shredded
  • 1 tbsp onion powder
  • 1 tbsp herbal mix
  • 1 tbsp garlic butter
   Melt butter in a skillet, saute onion, garlic, parsley and basil.  Add shrimp then season. Half way through shrimp cooking, add the squash. When shrimp is finish cooking, add cheese.

Desserts

Pumpkin Spice Smoothie

16 oz pumpkin pureed
2 cups skimmed milk
2 cups ice cubes
2 tsp cinnamon powder
1 tsp pumpkin spice
1 tsp nutmeg
1 tsp mixed spice
1  vanilla bean, scrapped
trivia for taste
Blend all the ingredients together and then enjoy.

Pumpkin Ice Cream


1 cup pureed pumpkin
1 cup nonfat vanilla yogurt
1 tbsp brown sugar
1 tsp pumpkin spice
1 tsp cinnamon
1 tsp nutmeg
1 vanilla bean, scrapped
Combine all ingredients. Freeze for 1-2 hours before eating.
