2 Ingredients Honeydew Sorbet

This recipe is not only delicious but it's healthy, vegan, dairy-free and gluten-free. Easy and fun to make with kids.

Ingredients:

5 cups frozen cubed honeydew melon
3- 5 TBSP honey or coconut nectar (any other natural sweeteners)

Methods

-Add melons to a high speed blender, the bullet, or a food processor. Pulse to break up melons into small chucks then puree until a smooth finish.

- Add sweetener then mix. Freeze for at least 5 hours before serving.

Stir Fly Vegetables

Ingredients:

1 TBSP olive oil
5 garlic cloves, chopped
1 medium onion, chopped
1 large carrot, chopped
1 large celery stack, chopped
1 large red bell pepper, chopped

2 cup shredded cabbage (red and green)
2 sliced of canned pineapple, chopped
1 TBSP Chinese 5 spice powder
1/4 cup Stir Fry Sauce
water to sauce

Method:
- In a skillet, heat up oil then sauté onion and garlic.
-When seasonings are cooked down, all vegetables except for the cabbage then add in the 5 spice powder and mix well.
- Leave vegetables to steam.
- Mix sauce with water and pineapples.
- When vegetables are half way cooked down, add cabbages. Leave vegetables to steam.
- At the last minute of cooking, add I sauce with pineapple and mix well.

My Famous Bread Pudding Recipe

Do you have stale bread just siting in your bread pan or fridge, waiting to get new life? Are you tired of wasting your money and watching your bread go bad? Well it's time to give your stale bread a second chance at life and turn them into something delicious with this moist, sweet, fruity and easy-to-do recipe.

Ingredients:

5 slices of stale bread (you have the option of using fresh)
2 TBSP Butter (soft-room temperature)
2 large eggs
1 1/2 TBSP vanilla extract
2 tsp rosewater extract
1 tsp nutmeg, cinnamon and mixed spice powder
1/2 cup brown sugar
1 1/2 cups milk
1/2 cup of soaked fruits-raisins, dates, ect with liquid, 50/50 each (soak fruits in sweet wine for a couple of days)
1/2 tsp salt

NB// The soaked fruits are optional, so if you aren't going to use it then go ahead and add in the 1/2 of sweet wine or just use 2 cups of milk to make it kid friendly.

Method:

- Butter bread sliced, chop them up then arrange in pan.

- Combine all ingredients.

- Pour mixture into bread pan and let it sit for 15-20 mins.

- Bake for 45 mins. at 350 degrees or until golden brown.

Star Fruit (Carambola) Sorbet

Ingredients:

1 cup sugar
3/4 cup water
2 1/2 lb star fruit (carambola)
1 tbsp. white rum (optional)
1 tsp cinnamon extract
1 tsp mixed spice extract
1 tsp rose water with almond extract
1 tsp almond extract
1 root of ginger

Method:

- In a saucepan over medium heat, combine sugar, water and spices. Cook for 5 min. then set aside to cool.
- Puree star fruit and ginger into a smooth consistency.
- Strain fruits, press down until the juice is extracted.
- Combine syrup, juice and rum.
- Freeze in a container over night or freeze in a ice cream maker.

Baked Avocado with Bacon and Eggs

This is a delicious comfort food that you don't need cooking skills to make.

Ingredients:

1 medium Avocado, cut in half and de-seeded
2 small eggs
3 strips bacon, cooked and crumbled
salt, onion powder, garlic powder and black pepper to taste

Method:

-Preheat oven at 425 degrees.

-If your avocado has a small hole where the seed was, scoop out some of the avocado flesh.

-Crack eggs into avocado hole, careful not break the yolks (Make sure that your avocado is already in a baking dish).

-Season eggs with salt, onion and garlic powder and black pepper.

-Gently place baking dish in oven for 15 minutes.

-After baking, remove from oven then top with bacon.

Mint Chocolate Ice Cream

This ice cream is creamy and rich in texture and flavor. Its refreshing mint flavor is perfect for this St. Patrick's Day celebration.

Ingredients:

1 pt. heavy whipping cream
1 cup low-fat 1% milk
1/4 teaspoon kosher salt
30 large fresh mint leaves, plus 2 tbsp. finely chopped leaves
5 large egg yolks
1/2 cup sugar, divided
3 ounces semi-sweet chocolate, chopped

Method:

Combine cream, milk, and salt in a medium heavy-bottomed saucepan.
Cook over medium-high heat until simmering and then add mint leaves.
Remove from heat, cover, and let steep at least 30 minutes, until the cream has a clear mint flavor.
Whisk yolks and sugar together in a bowl.
Drizzle 1/2 cup cream mixture into eggs, whisking constantly then whisk in rest of cream.
Pour mixture back into saucepan.
Cook over medium heat, stirring until mixture thickens slightly and coats the spoon (3 to 4 minutes).
Pour custard through a fine-mesh strainer into a bowl; remove mint.
Set bowl in a larger bowl of ice and cold water and let cool completely.
Add chocolate, then remove from ice bath and chill, covered, at least 2 hours or overnight.
Freeze custard in an ice cream maker according to manufacturer's instructions.
In the last minute of churning, add the chocolate and chopped mint.
Freeze at least 4 hours.

Pan Grilled Chicken with Plum Cucumber Salsa

Want to have a delicious recipe for that special someone this valentine's day that is easy, tasty and fancy? Try this recipe...

Chicken Marinated

(4 oz) 2 Raw boneless skinless chicken breast.
Salt and pepper, to taste
1/2 tsp dried basil
1/2 tsp dried parsley
1/2 tsp granulated garlic
2 TBSP brown sugar
1/2 tsp ground cumin
1 TBSP olive oil

Plum Cucumber Salsa

4-6 firm ripe red plums, cut 1/4 inch wedges

1 small cucumber, peeled, seeded and coarsely chopped

1 TBSP lime juice

1 TBSP sugar

1 tsp finely grated peeled fresh ginger

1/2 large jalapeno pepper

Salt and pepper, to taste
Finely chopped mint, to taste

1. Stir together all the ingredients for the salsa. Let it sit in the refrigerate for 1 hour before serving.
2. Mix all ingredients for the chicken then rub it on. Let it sit in the refrigerate for at least 3 to 4 hours.
3. Cook chicken in hot oil in a grill pan over medium heat for 3 minutes of each side or until done.
4. Serve with plum cucumber salsa.

Lemon-Chive Butter

1 stick of soft butter + 2 tsp lemon zest + 2 tsp mixed herbs

Red Wine Butter

1 stick of soft butter + 1/4 cup red wine of choose + 2 tbsp. chopped parsley + 1/2 small shallot + 2 tsp lemon juice

Parsley Butter

1 stick of soft butter + 1/4 cup chopped parsley + 2 tsp lemon + 1/8 tsp salt and pepper

Tarragon Butter

1 stick of butter + 1/4 cup meat glaze + 2 tbsp tarragon, chopped

Anchovy Butter

1 stick of soft butter + 1/4 cup chopped anchovy

Mustard Butter

1 stick of soft butter + 3 tbsp Dijon mustard + 2 tsp parsley + 1/8 tsp salt and pepper

Pear Butter

1 stick of soft butter + 2 tbsp pureed pear preserves + 1 tsp finely chopped fresh rosemary

Honey Butter

1 stick of soft butter + 1 tbsp raw organic honey + 1/8 tsp ground cinnamon

Mustard-Chive Butter

Jamaican Christmas Pudding

In Jamaica there is no such thing as a 'white' Christmas, so we don't serve our Christmas Pudding or Cake hot. The prunes, raisins, dates and currants are usually soaked in real Jamaican rum (Red Label Wine) for months or years.

This recipe makes approximately 4 lb. of cake, that is enough to fill a 9" baking pan.
