Pan Grilled Chicken with Plum Cucumber Salsa

Chicken Marinated

(4 oz) 2 Raw boneless skinless chicken breast.
Salt and pepper, to taste
1/2 tsp dried basil
1/2 tsp dried parsley
1/2 tsp granulated garlic
2 TBSP brown sugar
1/2 tsp ground cumin
1 TBSP olive oil

Plum Cucumber Salsa

4-6 firm ripe red plums, cut 1/4 inch wedges
1 small cucumber, peeled, seeded and coarsely chopped
1 TBSP lime juice
1 TBSP sugar
1 tsp finely grated peeled fresh ginger
1/2 large jalapeno pepper
Salt and pepper, to taste
Finely chopped mint, to taste 




1. Stir together all the ingredients for the salsa. Let it sit in the refrigerate for 1 hour before serving.
2. Mix all ingredients for the chicken then rub it on. Let it sit in the refrigerate for at least 3 to 4 hours.
3. Cook chicken in hot oil in a grill pan over medium heat for 3 minutes of each side or until done.
4. Serve with plum cucumber salsa.
