Mint Chocolate Ice Cream

This ice cream is creamy and rich in texture and flavor. Its refreshing mint flavor is perfect for this St. Patrick's Day celebration.



Ingredients:
  • 1 pt. heavy whipping cream
  • 1 cup low-fat 1% milk   
  • 1/4 teaspoon kosher salt
  • 30 large fresh mint leaves, plus 2 tbsp. finely chopped leaves
  • 5 large egg yolks
  • 1/2 cup sugar, divided
  • 3 ounces semi-sweet chocolate, chopped

Method:

  • Combine cream, milk, and salt in a medium heavy-bottomed saucepan.
  • Cook over medium-high heat until simmering and then add mint leaves.
  • Remove from heat, cover, and let steep at least 30 minutes, until the cream has a clear mint flavor.
  • Whisk yolks and sugar together in a bowl.
  • Drizzle 1/2 cup cream mixture into eggs, whisking constantly then whisk in rest of cream.
  • Pour mixture back into saucepan.
  • Cook over medium heat, stirring until mixture thickens slightly and coats the spoon (3 to 4 minutes).
  • Pour custard through a fine-mesh strainer into a bowl; remove mint.
  • Set bowl in a larger bowl of ice and cold water and let cool completely.
  • Add chocolate, then remove from ice bath and chill, covered, at least 2 hours or overnight.
  • Freeze custard in an ice cream maker according to manufacturer's instructions.
  • In the last minute of churning, add the chocolate and chopped mint.
  • Freeze at least 4 hours.
