Jamaican Coconut Drops

This sweet treat was once considered as a fast food that was first sold at school gates in Jamaica. Coconut Drops has many names like cut cake, drops and chip-chip. 



Ingredients: 

2 cups diced coconut
1 lb brown sugar
3/4-1/2 cup
1 TBSP grated root ginger
1 tsp vanilla extract
1/2 tsp cinnamon extract


1. Combine all ingredients adding sufficient water to cook coconut. 

2. Boil until very sticky (20-30 minutes).

3. Mix a little and drop by spoonfuls onto a tin sheet.
