Star Fruit (Carambola) Sorbet

Ingredients:

1 cup sugar
3/4 cup water
2 1/2 lb star fruit (carambola) 
1 tbsp. white rum (optional)
1 tsp cinnamon extract
1 tsp mixed spice extract
1 tsp rose water with almond extract
1 tsp almond extract
1 root of ginger

Method:



- In a saucepan over medium heat, combine sugar, water and spices. Cook for 5 min. then set aside to cool. 
- Puree star fruit and ginger into a smooth consistency.
- Strain fruits, press down until the juice is extracted.
- Combine syrup, juice and rum.
- Freeze in a container over night or freeze in a ice cream maker.
