Baking With Kids This Thanksgiving
7:00:00 AMBaking with your kids is a fun little way to bond and teach your child ways around the kitchen. This thanksgiving I implore all parents or guardians to bake with there kids. This will definitely give your child a sense of proud and thankfulness.
So since this is a thanksgiving post, I am going to share with you two different and delicious pies that you can bake your kiddos.
1. Coconut Crème Pie
Ingredients for crust:
- 1/4 cup sweetened coconut flakes
- 12 rectangular graham crackers
- 1 stick butter, melted and slightly cooled
- 3 tbsp dark brown sugar
- 2 tsp cinnamon powder
- 1 can coconut milk
- Half and Half cream (enough to make 3 cups with the coconut milk)
- 3 egg yolks
- 3/4 cup granulated sugar
- 1/3 cup cornstarch
- 1 cup toasted coconut flakes
- 2 tsp vanilla extract
- 2 tsp cinnamon extract
- 1 tsp mix spice extract
- 1 tsp rose water
- 1 tsp coconut extract
- 1/4 tsp salt
- 1 1/2 cups chilled heavy cream
- 3 tbsp. powdered sugar
- 1/2 tsp pure vanilla extract
Method for crust:
- Preheat oven at 325 degrees.
- Crush graham crackers then combine with sugar, spices, coconut and butter.
- Press crumbs evenly into your pie plate (9 or 10").
- Bake for 13-15 minutes
- Remove from oven and cool completely before adding filling.
Method for Filling:
- In a saucepan combine half and half, coconut milk, egg yolks, sugar, cornstarch and salt.
- Bring to a boil over med-low heat, mix until very thick.
- Remove from heat then stir in the rest of ingredients.
- Pour the custard into the pie crust.
- Let it cool for 2-4 hours or until it is firm.
Method for Topping:
- Beat the heavy cream with the other ingredients until it makes a stiff peak.
- Spread topping over the cooled pie.
2. Pumpkin Cheesecake Pie
Ingredients for crust:
- 12 rectangular graham crackers
- 1 stick butter, melted and slightly cooled
- 3 tbsp. dark brown sugar
- 2 tsp pumpkin spice
- 2 tsp cinnamon powder
Ingredients for Crème Cheese Layer:
- 4 oz. Cream Cheese, softened
- 1/4 cup white sugar
- 1/2 tsp vanilla extract
- 1/2 tsp cinnamon extract
- 1 egg
Ingredients for Pumpkin Cheese Layer:
- 1/2 cup pureed pumpkin
- 4 oz. Cream, soften
- 1/4 cup white sugar
- 1/2 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 1/2 tsp mixed spice
- 1/4 tsp ground nutmeg
- 1 egg
Method for crust:
- Preheat oven at 325 degrees.
- Crush graham crackers then combine with sugar, spices, coconut and butter.
- Press crumbs evenly into your pie plate (9 or 10").
- Bake for 13-15 minutes
- Remove from oven and cool completely before adding filling.
Method for Cream Cheese Layer:
- Combine cream cheese, sugar, vanilla and cinnamon, beat until smooth.
- Blend in egg.
- Pour the creamy batter onto crust.
Method of Pumpkin Layer:
- Combine cream cheese, sugar, vanilla and cinnamon, beat until smooth.
- Blend in egg.
- Combine pumpkin and spices to mixture.
- Carefully spread over the cream cheese batter.
- Bake for 35 to 40 minutes or until center is almost set.
- Allow to cool before refrigerating for 3 to 4 hours.
