Mint Chocolate Ice Cream

This ice cream is creamy and rich in texture and flavor. Its refreshing mint flavor is perfect for this St. Patrick's Day celebration.
Ingredients:
- 1 pt. heavy whipping cream
- 1 cup low-fat 1% milk
- 1/4 teaspoon kosher salt
- 30 large fresh mint leaves, plus 2 tbsp. finely chopped leaves
- 5 large egg yolks
- 1/2 cup sugar, divided
- 3 ounces semi-sweet chocolate, chopped
Method:
- Combine cream, milk, and salt in a medium heavy-bottomed saucepan.
- Cook over medium-high heat until simmering and then add mint leaves.
- Remove from heat, cover, and let steep at least 30 minutes, until the cream has a clear mint flavor.
- Whisk yolks and sugar together in a bowl.
- Drizzle 1/2 cup cream mixture into eggs, whisking constantly then whisk in rest of cream.
- Pour mixture back into saucepan.
- Cook over medium heat, stirring until mixture thickens slightly and coats the spoon (3 to 4 minutes).
- Pour custard through a fine-mesh strainer into a bowl; remove mint.
- Set bowl in a larger bowl of ice and cold water and let cool completely.
- Add chocolate, then remove from ice bath and chill, covered, at least 2 hours or overnight.
- Freeze custard in an ice cream maker according to manufacturer's instructions.
- In the last minute of churning, add the chocolate and chopped mint.
- Freeze at least 4 hours.

i love how you styled your first picture! and i love mint chocolate ice cream; i'm normally too lazy/impatient to make my own ice cream, but i might have to make an exception for this recipe (:
