Jamaican Corn Bread

This is one of my family recipes for a delicious and popular quick bread. It is very easy to make.


1 1/4 cups flour
3/4 cups cornmeal
1/4 cup canned sweet kennel corn, drained
1/4 cup sugar
4 1/2 tsp. baking powder
1/2 tsp. salt
1 egg, beaten
2/3 cups evaporated milk
1/3 cup melted margarine


Preheat oven 425F.
Grease your loaf pan (8x4).
Combine dry ingredients.
Mix egg with milk and margarine.
Combine dry and milk mixture (don't over mix, this will cause tunnels in the bread).
Pour into loaf pan, bake for about 30 minutes
