Jamaican Christmas Pudding

In Jamaica there is no such thing as a 'white' Christmas, so we don't serve our Christmas Pudding or Cake hot. The prunes, raisins, dates and currants are usually soaked in real Jamaican rum (Red Label Wine) for months or years. 

This recipe makes approximately 4 lb. of cake, that is enough to fill a 9" baking pan.  



Ingredients: 

  • 4 cups mixed dried fruits soaked in rum (prunes, raisins, dates and currants)
  • 1 cup white rum
  • 6 oz bread crumbs
  • 6 oz flour
  •  1/2 lb. butter
  • 1/2 lb. dark sugar
  • 6 eggs
  • 1 tbsp browning
  • 1 tbsp mixed spice
  • 1 tbsp cinnamon extract
  • 2 tsp vanilla extract
  • 2 tsp lime juice 
  • 1 tsp lime or orange rind
  • 1 tsp almond flavoring 
  • 1 tsp baking powder
  • 1/4 tsp salt 


Method:
-Line the baking pan with grease paper and / or shortening.
-Beat butter and sugar until light and fluffy.
-Mix in browning, almond, lime juice and rind, cinnamon, vanilla.
-Add eggs one at a time then fruits. 
-Mix breadcrumbs, flour, baking powder, salt and mixed spice in bowl. 
-Combine both mixture and rum by folding in. 
-Pour into baking pan.
-Bake for 1 hours at 350 degrees (Emerge baking pan in a 1" of water in the oven).
